  1. Sift flour, soda, cinnamon, and salt together. In large bowl beat eggs. Add oil, buttermilk, sugar, and vanilla. Mix well. Add flour mixture. Mix well. Add pineapple, carrots, coconut and nuts. Mix well. Pour into oven, coated with shortening and floured. Bake 45 minutes to 1 hour. Prepare glaze.
  2. Glaze: 1 cup sugar 1/2 cup butter 1/2 teaspoon baking soda 1 tablespoon corn syrup 1/2 cup buttermilk 2 tablespoons vanilla Combine and boil for 1 minute. When cake is done pour over cake while hot. Cool completely. Frost. Orange Cream Cheese Frosting 1/2 cup softened butter 8 ounces softened cream cheese 1 teaspoon vanilla 1 teaspoon orange juice Combine butter and cream cheese. Add remaining ingredients. Beat until thick and smooth. Frost cake. Garnish with carrot curls, thin orange twists, and/or mint leaves.
